The best banana nut bread recipe EVER!

This is what I bought the over ripe bananas for today. I read on someone elses blog she was going to make banana bread with an over abundance of bananas she got for CHEAP.

I have had a few Banana bread recipes and this one is by far my favorite. I have changed a few things from the original. I love this banana bread!

2/3c Sugar
1/2 cup Butter (must be REAL BUTTER)
2 eggs
3 medium over ripe bananas mashed (1.25cup)
1/2T vanilla
1 1/3c flour
1/3 cup oat bran
1 cup chopped pecans (you can use walnuts I prefer pecans)
1/2t baking soda
1/2t salt
1/4t cinnamon

Set oven temp for 350 and preheat.
Cream butter and sugar until light anf fluffy. Add eggs and mix until fully incorporated. Turn mixer to low and add vanilla and banana, mix well. Add remaining ingredents and mix by hand just until combined-do not overmix!

Spoon batter into 8x4 inch loaf pan and cook for 60-70 minutes
OR
Spoon into muffin tins fill 2/3 way full cook for 19-24 minutes

If you don't have oat bran that is OK, change flour to 1 2/3 cup instead.
